Quinoa Stuffed Peppers recipe



These peppers…these are GOOD for the body. Packed with vegetables, whole grains, and TONS of flavor. You won’t even miss meat with this meal. This amazing recipe I founded at http://www.thedietitiandiaries.com and I love it.

Ingredients
  1. 1 medium onion, finely chopped
  2. 2 tablespoons olive oil
  3. 2 ribs celery, finely chopped
  4. 1 tablespoon ground cumin
  5. 2 cloves garlic, minced
  6. 1 6-oz package fresh spinach, chopped
  7. 2 fresh tomatoes, chopped
  8. 1 15-oz can black or pinto beans, rinsed and drained
  9. 3/4 cup quinoa, uncooked
  10. 3 large carrots, finely chopped or grated
  11. 2 cups water
  12. 1 1/2 cups pepper jack, monterey jack, or mozzerella cheese, divided
  13. salt and pepper, to taste
  14. 4 large bell peppers, halved lengthwise, ribs removed
